I had whole-wheat linguini with mushrooms and sundried tomato pesto (the red kind, not the green kind) with fresh grated parmagiano regiano (not sure if that's how that is spelled) on top. I had asparagus as the side dish (no, not the purple kind, the green kind).

Sounds complicated, but it is v. easy to make.  And it was all v. delish!

I don't have the linguini, mushrooms, pesto or asparagus in the cupboard at present. I do have a block of venerable Parmesan.......that's a start.

Yes, a very good start!  Spaghetti (or any noodle) and spaghetti sauce are good substitutes, if you have them.  I always try to keep a pasta and a sauce on hand...they always taste great, and they keep practically forever!

Our local Dutch butcher sold me some wonderful new thingy he's trying out this week - chicken breasts stuffed with feta and pesto, wrapped in prosciuto with fresh basil leaves tucked under the ham strips. As instructed by Wim, I gave them a spritz from an olive oil aerosol and baked them at 180 (that's 350 for the old fashioned who have yet to upgrade to the decimal system) for 20 minutes. We had this with a simple french salad tonight. What a gourmet treat. And no effort at all - just as well, feeling totally buggered this evening, I think I may have overdone things at the gym this afternoon.
