UNMAST/ED – remove or destroy the mast on a ship https://en.wiktionary.org/wiki/unmasted
UNMATE – unmated is a rare word and in the definition it states simple past participle of unmate…

I'd have thought it was more likely to be an adjective describing a person or animal that has not found a mate.

I suspect dismast would be used more often than unmast. Nevertheless unmast is in some dictionaries. Unmasted is sometimes used as an adjective describing a ship that has no masts by design, as in this quote from the British Hansard in 1873:

Controversy still continued as to the merits of masted iron-clads, masted turret ships, unmasted turret ships, and broadside iron-clads...

I'll add unmast, unmasting and unmasted as rare words.

The online Oxford gives two senses for unmate:

Quote
  • To cause to be no longer mated; to deprive of a mate.
  • To separate or disconnect (what had been connected or joined).

In practice the word seems to be mainly used with the second meaning, in relation to electronic equipment, as noted by RTT. An example, from the website of Digi-Key Electronics:

To unmate, a button-style lever on the housing top is pushed down to allow the wire to be disengaged.

Unmate and unmating will be added as rare words.
