Alan - Welcome back - glad you had a nice time in chilly Hobart. I was wondering why the forum was a bit quieter over the weekend but now I know its only you and me playing all is explained!

I was wondering if we can assume there will always be words starting with each of the 9 letters?

No, we can't assume that will always be the case. The way the puzzles are created, there's no guarantee that there will be words starting with every letter in the puzzle.

For example, there have been quite a few puzzles where X is one of the letters, and in some cases there was no word starting with X. I can't say whether there have been any cases involving a letter other than X, but it's theoretically possible.
