What to do with chicken fat?

If it's fresh, make chicken gravy.

Put it on a plate on the kitchen floor and call the cat (they're usually both there already, begging). They can smell chicken fat, fresh fish and minced beef from their fave bird-watching spot down at the native bush reserve three properties away from us.

Most everything is better with a good gravy.

Recently I have been working on country fried (or chicken fried) steak.  I have been using a bacon-beef-onion-mushroom-sour cream gravy.  Serious YUM!
